How do I make istikhara when I feel stuck between two choices?

Istikhara is not a substitute for thinking. Gather facts, take counsel from people who fear Allah and know you, then pray the two rak’ahs and the du’a of istikhara, asking Allah to make the better path easy and the worse one distant.

Do not wait indefinitely for a vivid dream. Look for what opens with less inner turmoil and fewer closed doors after you have asked Allah. If both remain possible, choose, trust, and stop reopening the decision every morning. Tawakkul includes walking.
